Quick Pickled Onions

QUICK PICKLED ONIONS

Ingredients:
1/2 cup red wine vinegar
1/2 cup cold water
1 red onion
3-5 sprigs thyme

Directions:
Peel onion. Cut in half lengthwise. Slice into half moons as thin as possible. Add thyme sprigs & sliced onions to a non-reactive container, then pour vinegar & cold water to cover. Shake well & refrigerate. Ready to use in approximately 15 minutes, depending on thickness of slice.
