CRANBERRY RELISH
Ingredients
Makes two cups
1 orange
1lb fresh cranberries
1 cup sugar
3 tbsp extra virgin olive oil
4 green cardamom pods, crushed (use the back of your knife same as when crushing garlic) ● 4 whole cloves
3 cinnamon sticks
1 jalapeno, stem & seeds removed and thinly sliced
¼ cup port (or use some of the red wine you will be serving with dinner)
salt and pepper (sea salt and fresh black pepper are preferable)
Substitute ground spices if whole spices not available: 3 tsp of each
